Black Bean Salsa• 1 can black beans drained and rinsed• 1 cup fresh or frozen white corn• 1 cup chopped grape tomato’s• 2 avocado’s finely chopped• 1 bunch cilantro rubbed first then chopped**(rubbing the cilantro releases the flavor)1 & 1/2 pkgs of dry Italian Seasoning mixedwith 2 T of vinegar and 1/3 cup of olive oil. (Western Family pkgs are always 2 or 3 for $1)Pour over salsa and mix.
Being done with grocery shopping AND finding the "perfect" items to make some Christmas gifts with (heaven forbid I actually buy stuff without being able to make something first). The only bummer in my shopping trip was that the store was out of Weight Watcher eclairs (completely out! Is my recommendation catching on?), so I'll have to go back; plus, I forgot several key items (I hate getting home and forgetting stuff). Things I Love - Saturday Edition
And now, in keeping with my trying-to-be-more-positive kick (remember the gratitude list?), it's time to introduce a new feature on Thinking Pink entitled Things I Love. In no particular order, here are the things that I love the most right now (and, of course, being the fickle person I am, these are likely to change from day to day):Sleeping in on a lazy Saturday morning. Could there be anything better?I don't know if this is a new flavor, but it's certainly new to me. Yummy! If you like Creme Brulee (and really, who doesn't?), then this is for you. Granted, it's a *wee* bit super sweet, but in small doses it's a dream.I Love Lucy repeats on TV Land. Every time I think I've seen every episode, another one comes on to surprise me. She was a classic who can never be beat.My big plan for the day? Making a bowl of The Best Avocado Salsa In The World. A guy at work used to make it for Treat Day and I fell in love. Would you like the recipe? Here you go (although I don't use the cilantro):
